The grapes used for the production of La Pernice are selected and harvested manually by the first decade of August. After destemming and macerate for 8-10 hours at controlled temperature, the grapes are pressed softly and inertly to reduce the supply of antioxidants. Subsequently, alcoholic fermentation takes between 10 and 12 days, maintaining a temperature between 13° and 15°C. After fermentation, 30% of the wine is aged in 30 hl rover barrels for 4 months. Subsequently, it is reunited with the remaining mass that follows a steel refinement at a controlled temperature for 6 months. This process allows to obtain a fragrant, fresh and fruity wine, keeping unchanged the varietal characteristics of structure and power that Sauvignon Blanc expresses in the warm Sicilian climate. The Pernice is a wine that perfectly matches dishes based on fish and white meat. It is produced in the province of Palermo and the recommended service temperature is between 8 and 10°C. Cantine Paoletti

The Northern Crown is the symbol that the Paoletti family wanted to use to best explain their production philosophy. A symbol of guidance and help in achieving their goals, a symbol of love and passion for a generous and benevolent land, which gives us wonderful products rich in tradition, scents and flavors. Finally, it is a symbol of Dionysus, the god of wine, ecstasy and the liberation of the senses, the essence of creation in its perennial and wild flow. Our family, day after day, pays particular attention to the care of the vineyard and the winemaking of its grapes in order to achieve a result that expresses, in all its totality, the great value of sacrifice and passion for our land. For over fifty years Gaspare and Giovanni, sons of Francesco who in the 1950s bought the first plot in the Pernice district, get up every morning with the sole aim of cultivating with care and dedication the land in which they are known: years of pruning and milling, plowing and irrigating, always with the same desire and passion as the first day. The love for the land is the inspiring principle that pushes the two brothers to take care of almost 30 hectares of property: an ideal that they have been able to pass on to the third generation, which, strong of the knowledge gained during university studies, is making a great contribution in terms of innovation of the production system. The company's goal today, located in the Pernice district in the municipality of Monreale, is to create unique products, which can best express our "Sicilianity", but which can also convey the sacrifice and dedication of a family now veteran in viticulture.
