The vineyards are located in the production area of Messina, characterized by a medium soil dough tending to limestone. Vinification takes place with maceration at controlled temperatures, initially at 12°C for the first 24 hours and then gradually increasing until it reaches 28°C. The duration of maceration may vary. After unscrewing, the grapes are pressed gently and the aging takes place in French oak barrels with a variable capacity of 225 to 3000 liters for about 4 months. After bottling, the wine rests at a controlled temperature for another 4 months. Masseria is characterized by an alcohol content of 13%. It is recommended to combine it with red meat, game and mature cheese. The ideal service temperature is between 14 and 18°C. Cambria

The Cambria Winery was born in a viticultural territory par excellence where until the 70s the "Cardinale", a very valuable red berry table grape, was produced. Inaugurated on June 14, 2009, it was awarded as the most technologically advanced winery in Sicily among those with very high quality production standards. Among the numerous technologies present in the winery, we can highlight, from the entrance of the grapes, entirely hand-picked, checked through a selection table, a control system that manages the temperatures of the grapes, musts, wines and aging rooms, as well as of the winery itself. Cambria adopts the most important technology, which allows to create wines of very high organoleptic quality and to fully enhance their peculiarities. It is the "full-production" automatic winemaking system, a real pride for the entire company as there are few Italian wineries that can boast this system. The winery has a capacity of about 1,500 hectoliters between stainless steel containers, barrels and French oak barriques.
