Antichi Vinai

Antichi Vinai 1877 is a tradition that looks to the future. Our wine is the offspring of a generous Volcano that makes it rich and long-lasting. Producing it according to tradition is a duty and a privilege for us, the heirs of this land. The natural micro-climate guarantees strong grapes that allow us to reduce treatments without losing quality. Behind each wine is a story to tell and a method that enhances it. We care about the ecological balance of this territory and choose sustainable cultivation. Producing wine is a job that is measured on the hands that collect the ripe bunches. The grapes are thermally reduced (8-10° C) to prevent their biological degradation. We then carry out a gentle pressing that allows us to extract from the white and red grapes the most precious must, the flower must. For a wine with a rich body and intense aroma. We carefully clarify the flower must of the white grapes and prepare it for fermentation at controlled temperatures ranging from 12 to 18°C. For the red ones, the procedure is different. We deposit them whole in steel tanks to proceed with a fermentative maceration at controlled temperatures. After a wait of about two weeks, the product is ready for gentle pressing and for its refinement. We carry out each operation with a low environmental impact regardless of the type of winemaking project we are interested in pursuing. The production sites are safe and suitable to guarantee products of excellence.
