Subsequently, the passive grapes are pressed directly into the pneumatic press. The must is clarified only for static decantation at 20°C and fermented in oak barrels. The fermentation takes place slowly and continues for months until its natural stop. Travase rituals are made to naturally soften the wine before bottling. This wine is aged for at least 18 months, during which it develops complexity and harmony. It is recommended to serve it at a temperature of 10°C.
