In addition, the soil has a total limestone content of between 20% and 35%. The vinification of the Vigna di Gabri takes place through alcoholic fermentation in steel, at a controlled temperature of 15-16°C. Subsequently, the wine is aged for 6 months, of which 85% in steel and the remaining 15% in French oak barriques of second passage. Finally, the wine rests in the bottle for a further 3 months, allowing a better integration of aromas. The Vigna di Gabri is characterized by its versatility in combination with food. It is perfect to taste with appetizers, first dishes, fish, molluscs, white meat and vegetables.
