The soil in which the grapes are grown is medium clay dough. The vinification takes place with the soft pressing of the whole white grapes and the fermentation takes place at low temperature. After harvesting, the wine is pulled in the following spring and refermented in bottle at a controlled temperature of 17 °. Subsequently, the wine is aged in contact with yeasts for 72 months, placed on pupitre with manual remuage. The Land of Anastasia is perfectly combined with white meat, crustaceans and vegetables. It is produced in the province of Palermo and the recommended service temperature is 6 °C. For over a decade, the natural characteristics of each vine cultivated here have been accommodated by the use of organic techniques and biodynamic technologies. These are aimed at using materials found in nature to fertilize the soil and observing lunar cycles to mark the various phases of cultivation. Thanks to the respect of a strict disciplinary, Abbazia Santa Anastasia has received the prestigious Demeter International certification.
