This wine has a 13% alcohol content and is characterized by its sandy terroir, which gives the wine a particular elegance and freshness. The grapes used for the production of the Russian Rina are collected and preserved in a cold room for one night, in order to preserve its quality. Subsequently, the grapes are gently destemmed and lazy, and fermentation takes place at a controlled temperature of 18°C-22°C for about 10-12 days. After fermentation, the wine is separated from the skins and naturally starts malolactic fermentation. The aging of the Russian Rina takes place in steel for at least 4-6 months on fermentation yeasts, with frequent movements of the noble foxes. This process contributes to giving wine a greater complexity and structure. The Rina Russo wine is perfectly matched with fish dishes, meats and cheeses. It is produced in the province of Ragusa and is recommended to serve it at a temperature between 14 and 18°C.
