Its name is Sicilia DOC and the grape used is 100% Grillo. With a 12.5% alcohol content, this wine is produced according to the Classic Method and has a Pas Dosé dosage. The soil in which the grapes grow is of a marvellous chalk type, which gives the wine unique characteristics. After careful selection of the grapes, these are gently pressed and vinified in vinary steel vases at a temperature of about 15°C. Aging takes place in the spring following the harvest, when the base wine is made to refer to the bottle at a temperature of 15°C for about 30 days. After taking the foam, the bottles are left in a cadasian for at least 20 months. Subsequently, they are placed in the "pupitres" to carry out the "remuage" and allow the illimpidment of the product. After about 20 days of "remuage", we make the boiling, without adding sugar to the wine. The Dosaggio Zero sparkling wine blends perfectly with appetizers, fish and white meat. It is produced in the province of Trapani and the recommended service temperature is 6°C. A farm business, carried on for three generations, has led Tiziana, Clemente, and Giacomo to embark on a new entrepreneurial journey made of love for their land and a desire to enhance its resources. We firmly believe that modern agriculture cannot disregard a deep sense of responsibility and respect for the environment and the adoption of sustainable behaviors. The family estate boasts 85 hectares of agricultural land including vineyards (60 hectares), olive groves (15 hectares), arable and fruit trees. The vineyards are located in the municipalities of Salemi and Santa Ninfa, in the center of a vast area with a strong winemaking vocation, ranging from 150 meters s.l.m. to 450 meters s.l.m.
