Feudo Montoni

For thirty years now, Fabio has been continuing the work of his grandfather and father, guardian of the ancient plants and their grapes. Fabio understands how important it is in his work to know the past well in order to look to the future. The invention of tradition becomes the key to understanding every decision he makes. Fabio personally takes part in all the different stages of the production process from the vineyard to the cellar. Fabio's wines, "...are quite unique: they have the grace of great superior reds not so much for structural richness, generally an ordinary thing, but for richness of elegance, style, and class...". At Montoni everything moves in the direction of listening to Nature. She commands. A strict and good mother, she always creates perfect conditions of balance that only if complied with and followed can be the prelude to great products. In the vineyard, the ancient operations have been repeated for centuries always by hand, in the same way. In the cellar, the wines are touched as little as possible, trying to exploit the forces of Nature: Gravity "great arm" that has been helping man for centuries, moves grapes and musts and slowly filters his wines. Or Winter, Nature's great refrigerator that makes wines stable and in the bottle free of deposits. Or the Mountain that "cools" the grapes in the hot Sicilian summers where at night the temperature drops making the plant "breathe" again.....
