After 48 hours of static decantation, the wine ferments for about 20-25 days at a controlled temperature of 15-18°C. Subsequently, the wine is aged in stainless steel tanks on fine leaves and subsequently in bottle for about 2 months. This wine perfectly matches with appetizers, fish, crustaceans, molluscs and seafood. Its province of production is Catania. The recommended service temperature is between 8 and 10°C. Thanks to precision viticulture techniques, satellite mapping of vineyards, biotechnologies, and the adoption of a protocol based on the most advanced principles of sustainability, the company has managed to eliminate the use of agrochemicals and fertilizers.
