The vinification of the Red Quater takes place in a traditional way, with a fermentation at a controlled temperature of 24°-26°C for 10 days in stainless steel tanks. Subsequently, the wine carries out malolactic fermentation. After wine making, the wine is aged for 10 months in French and American oak barriques, followed by a further 12 months of aging in bottle. This process gives wine a balanced complexity and structure. The Red Quater is characterized by its intense and complex aromatic profile, with notes of ripe red fruit, spices and hints of wood. In the mouth is soft, with well integrated tannins and a pleasant persistence. This wine is perfectly matched with first courses, white meat, red meat and vegetables. It is recommended to serve it at a temperature of 14/18°C to appreciate its characteristics. Firriato

The terroir is the intimate vocation of a land for a particular type of viticulture. In Sicily, it takes on the colors of a kaleidoscopic carousel: even a few kilometers apart, the same grape takes on unrepeatable characteristics.
