Subsequently, the wine is aged in casks of 225 and 500 liters used and semi-used for about 12 months, followed by another 6 months of aging in bottle. The Suber fits perfectly with red meat and cheese. Daino

We produce wine with respect for the environment and quality. Founded in 2006 by Gianfranco Daino, the eponymous farm extends within the reserve of the Bosco di Santo Pietro, south of Caltagirone in Sicily, immersed in a context of natural beauty. The company was born from the desire to carry on a tradition passed down for centuries by the hands of skilled farmers who have made the cultivation of Nero d’Avola, Frappato and Alicante a characteristic element of the Calatino territory. It is precisely by following the ancient methods of the wise winemaking tradition and the protocols of organic farming that we can guarantee a wine of extraordinary quality. Thanks to the skills of the Vigneri - personnel specialized in bush training - we take care of the vines at every stage of their cycle, with manual processing in respect of the environment and in full harmony with the territory. The bush training, together with the healthy and natural context guaranteed by the Bosco and the peculiarities of the red Mediterranean soil, allow us to obtain healthy and perfect bunches of grapes and to produce our wines without the use of chemical products and with a low quantity of sulfites well below the legal limits. Among the principles that guide our activity, the enhancement of resources and local culture is certainly in the first place, aware of the extraordinary wealth that our territory offers us. Thanks to a small local craftsman who works cork, we manage to close our bottles with high-quality cork stoppers and zero km from the same Bosco di Santo Pietro with a very low TCA rate. Sustainability, tradition and quality are the values that we seek to convey daily through our work, passionately raising our vines and offering good, authentic and sustainable wines
