This wine is made 100% from the Syrah grape variety, grown in the production area of Palermo. Its denomination is Sicilia DOC. With an alcohol content of 14.5%, the Syrah wine from Macellarotto has a structured character. The soil in which the vines are grown is sandy loam with a good presence of skeleton, giving the wine a particular minerality. After destemming, the grapes ferment in small steel tanks with selected yeasts at 23°C. During maceration, which lasts 10-12 days, daily cap breakings are carried out by manual punching down. After racking, malolactic fermentation takes place in steel tanks with indigenous lactic bacteria. The aging process takes place for 2 months in French oak tonneaux, 12 months in the bottle before release. This process gives the wine a balanced structure and a decisive character. The Syrah wine from Macellarotto pairs perfectly with red meats, game, and aged cheeses, thanks to its structure. The recommended serving temperature is 14/18 °C. The Case Alte winery follows an organic production philosophy, ensuring a sustainable and environmentally respectful approach in the production of this wine.
