The wine is aged in contact with the yeasts for a period of 72 months, during which the bottles are placed on pupitre and subjected to manual remuage. This long ageing process gives the wine a unique aromatic complexity and finesse. Natural organic wines The nature in which Abbazia Santa Anastasia is set offers unique pedoclimatic conditions that give the wines finesse and elegance and everything the vine needs. For over a decade, the natural characteristics of each vine cultivated here have been accommodated by the use of organic techniques and biodynamic technologies. These are aimed at using materials found in nature to fertilize the soil and observing lunar cycles to mark the various phases of cultivation. Thanks to the respect of a strict disciplinary, Abbazia Santa Anastasia has received the prestigious Demeter International certification.
