[description] => The Murgo Extra Brut is a quality sparkling wine produced in Sicily, specifically on the eastern slope of Etna. This sparkling wine is made 100% from Nerello Mascalese grapes, a native variety of the region. With an alcohol content of 12.5%, the Murgo Extra Brut is obtained through the classic method, which involves a second fermentation in the bottle. The grapes grow on soils of volcanic origin sands, giving the wine a unique minerality. The pressing of the grapes is very delicate, carried out with pneumatic presses, followed by the cooling of the must and decanting in insulated tanks. Fermentation takes place in stainless steel tanks at a controlled temperature of 14°C for about 20 days. Subsequently, the wine matures in stainless steel tanks for 7-8 months, before being bottled and left on the lees for a period varying between 5 and 6 years. The remouage process is carried out with pupitres, while the freezing of the neck, disgorging, and dosage are performed with semi-automatic machines. The Murgo Extra Brut is ideal to accompany Mediterranean fish sashimi and oysters, but it also pairs perfectly with fish and shellfish in general. The recommended serving temperature is 6°C, to best enhance its organoleptic characteristics. This Sicilian sparkling wine represents an excellence of the territory, capable of expressing the richness and complexity of the Nerello Mascalese and the volcanic terroir of Etna.
