At the end of fermentation, the wine matures in steel tanks for about eight months before the sparkling process, which is generally carried out from the beginning of the spring following the harvest. Moreover, after the second fermentation in the bottle, the wine matures on the yeasts for a minimum of 24 months. Finally, the dosage is carried out with wine coming from the same batch and a small amount of sugar that balances the acidity of the wine. This sparkling wine pairs perfectly with medium-matured typical cheeses, fresh seafood, and vegetable risottos. It is also ideal with fresh cheeses, vegetables, and seafood. The Murgo Brut Rosé is a Quality Sparkling Wine made 100% from Nerello Mascalese grapes, coming from the eastern slope of Etna, in Sicily, Italy.
