This sparkling wine, with an alcohol content of 12%, is obtained through the Method Martinotti, also known as the Method Charmat, and presents itself as an Extra Brut organic. The cultivation of the vines takes place on terraces characterized by an intense presence of stones, which give the wine a unique minerality. The grapes are subjected to a soft pressing and a cold maceration in reduction, followed by a slow fermentation at controlled temperature. The frothing takes place in autoclave for a period of 50 days, ensuring a fine and persistent bubble. This sparkling wine is perfect to accompany battered vegetables and fish, sautéed mussels or clams, sardines a beccafico or meatballs. It pairs wonderfully with seafood first courses such as tonnarelli with sea urchins and busiate zucchini and red shrimp. It is also excellent with breaded fish fillets and with the frying of paranza. Absolutely to try with a sandwich with panelle and crocchè. Ideal for appetizers, first courses, fish and vegetables, it should be served at a temperature of 6 °C.
