Fermentation takes place at a controlled temperature in steel, using native yeasts, to best preserve the varietal characteristics of the Nerello Mascalese. After the first fermentation, the wine is bottled for re-fermentation, where it remains on the lees for 20 months, developing complexity and finesse. The result is a sparkling wine of great freshness and vivacity, with a fine and persistent perlage. On the nose, the Palmento Costanzo Brut Rosé offers notes of white fruit, citrus and slight hints of bread crust, derived from the long ageing on the lees. On the palate, it is fresh and harmonious, with a good structure and a mineral finish that recalls the volcanic soil of Etna. Palmento Costanzo

Here everything speaks of the "Muntagna", as we call the Etna volcano, without compromise. Eighteen hectares divided over various districts and slopes, in small parcels vinified separately, because each plot is made unique by the lava flows that have settled over time. In the cellar, the particles follow separate vinifications, paths of evolution aimed at capturing the soul of each expression of the volcano. The choice of tanks and barrels is also a journey towards purity: only steel, tonneaux and large barrels because the essence of the wood does not overwhelm the natural richness of the original vine.
