The Cusumano 700 slm is a Sicilian sparkling wine of great elegance and refinement. Produced with a blend of 55% Pinot Nero and 45% Chardonnay, this sparkling wine comes from the hills of Palermo, in Sicily, Italy. With an alcohol content of 12.5%, the Cusumano 700 slm is made according to the Method Classico Brut, which gives the wine a unique complexity and finesse. The clayey soil on which the vines grow contributes to giving the wine a solid structure and a distinctive character. The pressing of whole grapes and the use of only the first flower must help to avoid tannins and preserve the wine's natural acidity. After a static decantation and a low-temperature fermentation, the wine rests for about 6 months on the fine lees. Afterwards, it is filtered and bottled for re-fermentation at 13°C. The bottles rest in the cellar for 36 months on the yeasts, a process that enriches the wine with complex aromas and a creamy texture. The disgorging takes place after this long period of refinement, ensuring a final product of the highest quality. The Cusumano 700 slm pairs perfectly with fresh cheeses, cold cuts, fish and shellfish, making it ideal for aperitifs and elegant dinners. The recommended serving temperature is 6°C, to best enhance its organoleptic characteristics.
