This is followed by the inoculation of selected yeasts and a first fermentation at a controlled temperature between 13 and 14°C. The wine matures in steel with noble lees until the foam is taken during the following spring. Subsequently, the wine is bottled for re-fermentation and refinement, a process that lasts about 48 months. This long refinement gives the Musita Passocalcara extraordinary complexity and finesse. It is an ideal wine to accompany appetisers, first courses, fish, shellfish, cold cuts and vegetables. The recommended serving temperature is 6°C. The winery is certified organic, guaranteeing a product that respects the environment and Sicilian winemaking tradition. In the second half of the 19th century, Don Ignazio planted the first vineyard, certain that this area on the slopes of the hill that the Arabs called 'musìta', because there was an ancient mosque, was among the most suitable in western Sicily. History and innovation merge on fifty hectares of vineyard, among the hilly territories of Salemi at an altitude of 500 meters. The vineyard area of the company includes about two hundred hectares, mainly on the hilly lands of the territory of Salemi, with an average altitude of five hundred meters above sea level. Of the total hectares, some are directly produced, others are indirectly produced. The latter falls under the "partner in the vineyard" project, which involves the involvement of Sicilian winegrowers in the application, under our guidance and supervision, of the quality protocol Musita.
