With an alcohol content of 11.5%, the DBE is made following the Pas Dosé classic method, which involves a second fermentation in the bottle. This artisanal process gives the wine a refined structure and a fine and persistent perlage. The volcanic terroir of Etna gives the wine a unique minerality, which is expressed in a complex and fascinating bouquet. After maturing for 6 months in steel on the lees, the wine rests for a further 18 months on the lees in the bottle, developing deep and harmonious aromas and flavours. On the nose, the DBE offers notes of seafood, shellfish and appetisers, which are also found on the palate, where the wine is fresh and lively, with a pleasant acidity and a long and persistent finish. The ideal serving temperature is 6 °C, perfect for enhancing the organoleptic characteristics of the wine. This sparkling wine is the ideal accompaniment for seafood and shellfish dishes, but also pairs beautifully with light and fresh appetisers. DBE - De Bartoli Etna

In the Contrada Rampante, between Solicchiata and Passopisciaro on the northern side of the volcano, was born Tenuta Solisciaro, property of De Bartoli Etna, DBE, an acronym that also recalls the meaning of Deep Bottom Earth. With 4 hectares of vineyard located between 743 and 769 meters above sea level, of which an hectare dedicated to Nerello Mascalese and Carricante, terroir reflects the authenticity and uniqueness of the northern part.
