Abraxas Alsine Pantelleria DOC is a Sicilian white wine that embodies the essence of its land of origin. Composed of 85% Zibibbo grapes and 15% Viogner, this wine represents a perfect blend of tradition and innovation. Its origin from the island of Pantelleria, in Sicily, gives the wine a unique character, influenced by medium-textured volcanic soils, loose and tending to crumble. The grapes, carefully harvested, are immediately transported to the cellar, where they undergo a gentle pressing to preserve the freshness and aromaticity of the must. The alcoholic fermentation takes place at a controlled temperature, a process that ensures the preservation of primary aromas and the complexity of the wine. Once the fermentation is finished, the wine rests for a long time on the lees, with frequent batonnage, a technique that enriches the body and structure of the wine. When the wine reaches the desired quality requirements, it is bottled, usually between April and May. Abraxas Alsine Pantelleria DOC presents itself as a versatile wine, ideal for accompanying dishes based on fish, shellfish, and white meats. The recommended serving temperature is between 8 and 10 °C, to best enhance its organoleptic characteristics. With an alcohol content of 12.5%, this wine offers a perfect balance between freshness and intensity.
