The Rosignolo Miriò Grillo Sicilia DOC is a Sicilian white wine made 100% with Grillo grapes, grown in the Calatafimi area, in Sicily, Italy. This wine stands out for its fresh and lively character, with an alcohol content of 12.5%. It is an organic wine, which means it is produced following sustainable and environmentally friendly agricultural practices. The soil on which the vines grow is medium clayey, ideal for giving the wine a balanced structure and good minerality. The grapes are harvested manually in crates, ensuring the selection of the best bunches. The white winemaking process involves a gentle pressing of the grapes, followed by a controlled temperature fermentation using selected yeasts. After fermentation, the wine is decanted and left to mature in steel tanks, where it rests until bottling. This process allows to preserve the freshness and typical aromas of the Grillo. The Rosignolo Miriò Grillo is a versatile wine, perfect to accompany dishes based on fish, shellfish and white meats. The ideal serving temperature is between 8 and 10 °C, to best enhance its organoleptic characteristics. This wine represents an excellence of the Sicilian wine tradition, capable of best expressing the unique terroir of the region and the quality of the Grillo grapes.
