Both grape varieties undergo a similar winemaking process. The harvested grapes rest in a refrigerator for a night, lowering the temperature to 6-8°C to protect the aromatic precursors. The next day, the grapes are gently de-stemmed and softly pressed to obtain the flower must. The must rests overnight in a tank at about 10°C to allow the natural sedimentation of solid particles, after which alcoholic fermentation takes place in stainless steel tanks at a temperature between 17-19°C for 10-12 days. This is followed by assembly and refinement in concrete sur lies for about 4 months with frequent stirring of the noble lees. This wine pairs perfectly with fish and shellfish appetizers, first courses with fish and vegetable sauces, fish and shellfish main courses. It is also great with cured meats.
