The grapes are grown on limestone soil and are hand-picked, transported to the cellar in small baskets, where they are destemmed, crushed and macerated for a few hours before pressing. The decanted must is then transferred and added to the pied de cuvée for natural fermentation, prepared in the previous days with grapes from the same vineyard. Fermentation lasts about 15 days at a temperature of 18°C. After fermentation, the wine is aged over the winter and following spring in steel, before being bottled without any filtration to preserve its integrity and character. The ageing in steel lasts 6 months. This wine pairs perfectly with fish and white meats and should be served at a temperature of 10/12 °C. The Valdibella winery is a member of the VinNatur association, committing to natural and sustainable viticulture practices. Valdibella

A cooperative of organic farmers in Camporeale with a sustainable project in which all resources, both human and natural, find their fulfillment. We knew from the start that the only way to succeed in the project was the union between different farmers. Alone, each would have done little. Or nothing. Ours is a complex project: cultivating the land and human relationships in respect of natural and social balances. The cooperative was born in June 1998 in a territory with a strong agricultural and rural vocation, joining the Itaca Salesian community that takes care of welcoming young people with social discomfort and promoting, through the Jonathan project, their integration into the world of work.
