At Feudi del Pisciotto, the marriage between ancient and modern is also celebrated by resuming the ancient winemaking process that used only the force of gravity as a tool for moving the must. In fact, the grapes harvested by hand in the vineyard, after further sorting and destemming, are made to slide by gravity into the vats in the cellar, saving energy and limiting carbon dioxide emissions but above all avoiding the deterioration of the quality of the raw material that would instead occur using the oenological pumps for the movement of the grapes.
