Abraxas Oxalis Sicilia DOC is a Sicilian red wine that embodies the essence of the island's winemaking tradition. Composed of 85% Alicante and 15% Cabernet Franc, this wine comes from the enchanting island of Pantelleria, one of the pearls of the Mediterranean. With an alcohol content of 14%, Abraxas Oxalis is distinguished by its decisive and enveloping character. The vineyards grow on medium-textured volcanic soils, which are generally loose, giving the wine a unique minerality and unmistakable aromatic complexity. Once the grapes arrive in the cellar, they are destemmed and the must is transferred to temperature-controlled steel tanks. Here begins the traditional red fermentation, with a spontaneous fermentation driven by selected indigenous yeasts. The maceration period on the skins lasts about 15 days, allowing the wine to acquire color, tannins, and intense aromas. Once the sugars are exhausted, a partial malolactic fermentation is carried out, which further softens the wine's profile. The bottle aging lasts 4 weeks, during which the wine further develops its complexity and harmony. Abraxas Oxalis is an ideal companion for red meats and semi-mature cheeses, enhancing the flavors with its structure and depth. It is recommended to serve it at a temperature between 14 and 18 °C to fully appreciate its aromatic and taste nuances. This wine represents a sensory journey through Sicily, combining tradition and innovation in a glass that tells stories of volcanic lands and passion for viticulture.
