Tenute Bosco Etna Rosso Piano dei Daini is a Sicilian wine of great character, produced with a blend of 90% Nerello Mascalese and 10% Nerello Cappuccio. This Etna Rosso DOC comes from the northern slope of Etna, an area renowned for the production of high-quality wines. The wine has an alcohol content of 13.5%, best expressing the characteristics of the volcanic terroir from which it comes. The vinification begins with a gentle destemming and crushing of the grapes, followed by a process of discharge from above by fall into truncated conical steel tanks. Here the fermentation takes place, which lasts for a period between 10 and 15 days at a controlled temperature. During this process, daily punching down cycles ensure a correct extraction of aromas and colour from the skins. After malolactic fermentation, the wine is aged in 700 litre French oak tonneaux for a period of 10-12 months. Subsequently, the wine rests in a steel tank for at least three months, then it is bottled and left to mature for a minimum of 6 months. In total, the wine can stay in the bottle for a period of 15/18 months before being marketed. This Etna Rosso pairs perfectly with red meats, aged cheeses and game, enhancing the flavours of these dishes with its structure and complexity. The ideal serving temperature is between 14 and 18 °C, allowing the wine to best express its aromas and flavours.
