The grapes grow on red lands, composed of very rich sub-alpine sands, which give the wine a unique complexity. Fermentation occurs spontaneously, with a maceration of 18-20 days on the skins and a small percentage of stalks, to enhance the natural flavours and aromas of the grape variety. Subsequently, the wine matures for 12-14 months in 500-litre French oak Tonneaux, followed by a refinement in the bottle for 16-20 months, which perfects its balance and structure. With an alcohol content of 13.5%, Cappello Margot presents itself as a full-bodied and enveloping wine, ideal for accompanying red meats, aged cheeses and game. The recommended serving temperature is between 14 and 18 °C, to fully appreciate its aromatic and taste nuances. The winery does not adhere to specific certifications or additional practices, focusing instead on the intrinsic quality of the product and respect for the territory.
