The duration of the maceration varies, allowing the maximum organoleptic characteristics to be extracted from the grapes. After racking, the grapes are gently pressed to preserve the quality of the must. The wine is then aged in French oak barrels of varying capacity, from 225 to 3000 litres, for about 14 months. Subsequently, the wine rests in the bottle at a controlled temperature for a further 6 months, allowing it to further develop its aromas and flavours. The Cambria Giulio Cesare Mamertino Rosso DOC is ideal for pairing with red meats, game and aged cheeses, enhancing the flavours of these dishes with its robust structure and well-integrated tannins. Cambria

The Cambria Winery was born in a viticultural territory par excellence where until the 70s the "Cardinale", a very valuable red berry table grape, was produced. Inaugurated on June 14, 2009, it was awarded as the most technologically advanced winery in Sicily among those with very high quality production standards. Among the numerous technologies present in the winery, we can highlight, from the entrance of the grapes, entirely hand-picked, checked through a selection table, a control system that manages the temperatures of the grapes, musts, wines and aging rooms, as well as of the winery itself. Cambria adopts the most important technology, which allows to create wines of very high organoleptic quality and to fully enhance their peculiarities. It is the "full-production" automatic winemaking system, a real pride for the entire company as there are few Italian wineries that can boast this system. The winery has a capacity of about 1,500 hectoliters between stainless steel containers, barrels and French oak barriques.
