The fermentation proceeds for about 9 days at a temperature of 28°C, at the end of which the pomace is separated from the wine and pressed. After malolactic fermentation, which also occurs spontaneously, the wine is aged over the following winter and spring in steel before bottling. This steel ageing process lasts 8 months, giving the wine a balanced structure and a complex aromatic profile. Valdibella Jaki is ideal to accompany red and white meats, served at a temperature between 14 and 18 °C. Valdibella

A cooperative of organic farmers in Camporeale with a sustainable project in which all resources, both human and natural, find their fulfillment. We knew from the start that the only way to succeed in the project was the union between different farmers. Alone, each would have done little. Or nothing. Ours is a complex project: cultivating the land and human relationships in respect of natural and social balances. The cooperative was born in June 1998 in a territory with a strong agricultural and rural vocation, joining the Itaca Salesian community that takes care of welcoming young people with social discomfort and promoting, through the Jonathan project, their integration into the world of work.
