The Nero d'Avola grapes of our company are hand-picked and transported to the cellar where, once destemmed, the liquid part, namely the must, is obtained, while the skins remain in contact inside the tank for a period of 10-14 days. In this way, through daily pumping over and periodic delestage, the primary aromas present in the grape skin are extracted. Subsequently, the racking takes place, a process during which the pomace is separated from the now wine. The latter, finally, is stored in concrete tanks where "spontaneous malolactic fermentation" takes place. This wine pairs perfectly with red meats, white meats and semi-mature cheeses, and should be served at a temperature of 14/18 °C. The cellar adheres to sustainable and organic practices, guaranteeing a high-quality product that respects the environment. Our company is rooted in the territory of Sant’Angelo Muxaro, Agrigento, here in 1970 the first vineyard is planted. The fruit of a passion, that of grandfather Paul for viticulture, who has been able to value a fertile and generous land, preserve its uniqueness and make it a precious gift for generations to come. Today we boast of over 14 hectares of cultivated and cultivated land in organic farming. In harmony with the territory, the family estates are characterized by native and alloctoni vineyards, such as: Nero d’Avola, Perricone, Grillo, Catarratto Lucido, Syrah and Chardonnay. Since 2015 we have been carrying out the company with a combination of innovation, attention to the environment and ancient knowledge of peasant tradition. We pay tribute to the family tradition with daily commitment in the vineyard and high quality wine productions. Ours is a path of growth and a continuous tension to the excellence that aims to make our company a reality of first order in the panorama of Sicilian viticulture, recognized for the innovative techniques of biological wine making and the ability to value the territory.
