Maceration takes place without temperature control for six days, allowing the wine to develop a unique aromatic complexity. The ageing continues on the fine lees in amphora for 12 months, followed by a further 8 months in the bottle, giving the wine a remarkable structure and depth. The Barbanacoli Iddi Rosso is an ideal companion for red meats, white meats and semi-mature cheeses, enhancing the flavours of these dishes with its richness and intensity. The recommended serving temperature is between 14 and 18 °C, to fully appreciate its aromatic nuances. The Barbanacoli Iddi Rosso Salina IGT is a Sicilian wine that embodies the essence of the island's winemaking tradition. In 2020, the Agricultural Company Barbanacoli was established, a new winery in Salina, Aeolian Islands, and more precisely in the Municipality of Malfa. Diego Taranto and Clara Schwartzenberg resume the cultivation of 2.5 hectares of vineyards planted 40 years ago, and always cared for in accordance with the rules of organic farming. Passion for the territory, drastic selection of the grapes are the principles that hold in the large valley Barbanacoli, the area where the vineyards are located, and which gave its name to the Company.
