After racking, malolactic fermentation takes place in steel tanks with indigenous lactic bacteria. The wine matures for 2 months in French oak tonneau and then refines for 12 months in the bottle before being released on the market. The Case Alte Syrah from Macellarotto is particularly suitable for accompanying red meats, game and aged cheeses. The recommended serving temperature is between 14 and 18 °C. This wine stands out for its decisive character and its aromatic complexity, which make it an excellent choice for lovers of structured and quality red wines. The current winemaking project involves carrying out the entire production chain in the small universe of the Macellaroto district, and aims to maintain a contained dimension, on a human scale, which ensures careful and meticulous control of all stages of the production process, from the vineyard to bottling.
