Subsequently, the wine matures for 18 months in used Taransaud tonneaux, then refines in the bottle for a further 6 months. This process gives the wine a unique complexity and depth. Centopassi Sulla Via Francigena is ideal to accompany first courses and red meats, enhancing the flavors with its structure and balance. Centopassi

Centopassi is the winemaking soul of the Libera Terra cooperatives that cultivate lands confiscated from the mafia in Sicily. The vineyards are distributed in the Alto Belice Corleonese, an area dominated by nature, with overwhelming beauty, unmistakable horizons and unforgettable sunsets. The wines tell the diversity of each vineyard, the soils that distinguish them and the grape varieties that enhance their characteristics from time to time. The Alto Belice Corleonese is a territory particularly suited to the production of high-quality wines. Open, unspoiled scenarios, with limestone peaks emerging on a plateau with a very high average altitude, make this corner of the Mediterranean a perfect place for the optimal growth of the vine. The thermal excursions, the winds, the composition of the soil, the symbiosis achieved with the grape varieties we have selected lead to having ideal starting conditions, far from many stereotypes linked to Sicilian wine. Here elegance is the master, sapidity is omnipresent, the maximum drinkability of the wines guides every smallest decision, from the meticulous care of the vineyards to processes that always tend to emphasize freshness and expressiveness of the fruity components.
