During this period, pump-overs and punch-downs are carried out every 8 hours to ensure better extraction of aromatic compounds and tannins. Malolactic fermentation is carried out to soften the wine's acidity, making it rounder and more pleasant on the palate. Subsequently, the wine is aged for 6 months, partly in thermo-controlled stainless steel tanks and partly in French oak barriques, then it rests for a further 3 months in the bottle before being marketed. Taschetta Naìti Syrah is an ideal wine to accompany red meats, game and aged cheeses, served at a temperature of 14/18°C.
