After racking, the wine undergoes malolactic fermentation in tonneaux for 8 months, followed by refinement in the bottle for a further 12 months. The result is an elegant and complex wine, with notes of red fruits, spices and a light toasting. The Todaro 4Elementa pairs perfectly with red meats and semi-mature cheeses, but it is also ideal with mature cheeses. The recommended serving temperature is between 14 and 18 °C, to best appreciate all the aromatic and taste nuances of this wine. Todaro

Our story has deep roots. A passion passed down from generation to generation that has enriched over time. We are Giuseppe, born in 1988, and Adriano Todaro, born in 1991, strengthened by studies in the agricultural field and the experience gained from our father Calogero, we aim for hard work in the vineyard and in the cellar to achieve significant qualitative results. "For us, wine is like a dear person to be treated with care and dedication at all times, from pruning to hand harvesting to aging in French oak barriques." Our property extends over 25 hectares in the Valle dello Jato (Pa) with altitudes ranging from 400 to 700 m above sea level. The specific characteristics of this terroir were already known in pre-Roman times: on the top of the homonymous mountain, in fact, there was a rich Jatina colony that cultivated vineyards and from them derived the precious wine. It is in this land that we cultivate our vineyards with sensitivity, respecting the naturalness of the crops, from the care of the grapes in all processes, from the rows to the bottle, our Todaro wines are born.
