Subsequently, the wine matures for 18 months in medium-toasted barriques, enriching it with spicy and vanilla notes. Before being marketed, the Cubburo further refines in the bottle for 6 months, thus reaching its full expression. This wine pairs perfectly with first courses and red meats, enhancing the flavours of Mediterranean cuisine. Baglio Bonsignore

"We are Debora and Luigi and together with our three children Simone, Pietro and Carlo we have realized our dream: to produce quality wines from our vineyards. For us, cultivating the land and raising the plants is a mission that we carry forward with care and attention. Our story begins a few years ago, in 2016. We fell in love with this estate and we started working to make our dream come true: not only the vineyards, the wine but also the construction of a winery with an attached relais". The total area, in the Giddio district of Naro, is 13 hectares, 7 of which are planted with Nero d'Avola and Syrah, almost four planted with Grillo and the remaining part that will be planted with Chardonnay. The vineyards are located at an altitude between 300 and 400 meters above sea level. There is a farmhouse with a structure from the 1700s of about 900 square meters. Another peculiarity of the place is the presence of a lake that occupies about half a hectare and is used for irrigation. The winery is located on the route of the Wine and Flavors of the Valley of the Temples, in that area suitable for the cultivation of Nero d'Avola and Grillo."
