Just before the end of alcoholic fermentation, which lasts about twelve days, the wine is definitively separated from the pomace, which is then pressed. The wine remains to refine on the yeasts until the following spring, before being bottled. The ageing takes place for 6 months in steel. This wine pairs perfectly with seafood appetisers and first courses, particularly with fish-based appetisers and first courses. The ideal serving temperature is between 10 and 12 °C. The Valdibella winery is a member of the VinNatur associations. Valdibella

A cooperative of organic farmers in Camporeale with a sustainable project in which all resources, both human and natural, find their fulfillment. We knew from the start that the only way to succeed in the project was the union between different farmers. Alone, each would have done little. Or nothing. Ours is a complex project: cultivating the land and human relationships in respect of natural and social balances. The cooperative was born in June 1998 in a territory with a strong agricultural and rural vocation, joining the Itaca Salesian community that takes care of welcoming young people with social discomfort and promoting, through the Jonathan project, their integration into the world of work.
