This wine is classified as Terre Siciliane IGT and is obtained from a combination of vines, with 40% Nero d'Avola, 30% Cabernet Sauvignon and 30% Merlot. With a 14% alcohol content, Don Pietro Rosso has an intense and complex character. The soil in which the grapes are cultivated is of clayey sandy granulometry, giving the wine a balanced structure and a pleasing roundness. The vinification of this wine takes place through a spontaneous fermentation from pied de cuve of the grapes, without the addition of sulphur, in a concrete tank. The skin maceration occurs at controlled temperature for a period of up to 10 days. Subsequently, the wine is aged for 1 year in cement tank and for 12 months in bottle, allowing its aromas and flavors to develop fully. Don Pietro Rosso is perfectly matched with red meat and mature cheese, thanks to its structure and complexity. It is recommended to serve it at a temperature between 14 and 18 °C to fully appreciate its characteristics.
