The wine Santo Spirito, produced by the cellar Tenute di Aglaea, is an Etna Rosso DOC that fully represents the wine excellence of the Sicilian region. 100% obtained from the Nerello Mascalese vine, it is produced in the area of Etna Versante Nord, characterized by a volcanic soil that gives the wine a unique character. Vinification takes place in stainless steel tanks, both for alcoholic and malolactic fermentation, ensuring perfect preservation of the organoleptic characteristics of wine. Subsequently, the Holy Spirit is aged for 13 months in new 300 litre French barriques, with an average roasting and fine wheat, which give wine elegance and complexity. With a 14% alcohol content, this red wine is on the palate with an important structure and a perfect balance between acidity and tannins. The nose is perceived intense aromas of ripe red fruit, spices and mineral notes, typical of the volcanic territory. The Holy Spirit combines beautifully with white meat and game, exalting flavors and creating a unique taste experience. Its recommended service temperature is between 14 and 18 °C, to fully appreciate its characteristics. Produced in the province of Catania, this winery follows the FIVI production philosophy, guaranteeing special attention to environmental sustainability and the enhancement of the territory.
