According to the name Terre Siciliane IGT, it is obtained 100% from the vine Carricante, cultivated in the production area of the Etna Versante Nord. With an alcohol content of 12.5%, this wine is characterized by its volcanic terroir, which gives the product a unique and distinctive character. Vinification takes place through a preferential cryomaceration in press of a few hours, followed by a soft pressing of the grapes. Subsequently, the wine is subjected to a cold static illiteration and alcoholic fermentation in steel at a controlled temperature between 16 and 18°C. Aging occurs on its fine foxes with bâtonnage for about 6 months, followed by a period of at least 3 months in bottle. The Carricante shows a brilliant colour and an intense fragrance that recalls notes of white fruit and citrus fruits. The palate is fresh, balanced and persistent, with a pleasant minerality. It is recommended to serve it at a temperature of 8/10°C to fully appreciate its characteristics. This wine blends perfectly with appetizers, fish and crustaceans, enhancing the flavors of the dishes and offering a complete taste experience.
