This process takes place at a controlled temperature of 15°-16°C, in order to preserve the aromas and to give more structure to the wine. After vinification, the Galatìa is aged in stainless steel containers for about 5 months, allowing the wine to further develop its characteristics. Once the aging is completed, the wine is ready to be bottled. Galatìa is perfectly combined with fish and white meat dishes, offering a balanced and pleasant tasting experience. Its production takes place in the province of Catania, and the recommended service temperature is 8/10 °C. Distilleria Giovi

Our vineyards, from which we produce our four wine labels, are located in the Municipality of Randazzo, in the districts of Allegracore, Passopisciaro and Pirao. They are north-facing, at about 700/950 meters above sea level on volcanic soil at the foot of Etna. The Master Distiller Giovanni La Fauci personally oversees the entire production process, from the care of the vineyard, cultivated naturally without the use of chemical products, to the refinement in the bottle.
